My name is Laurent. Over ten years ago, I left Toulouse to settle in Neuvic-sur-l’Isle and found Caviar de Neuvic, fulfilling a childhood dream: working with fish and producing an ethical, world-class French caviar.

Following my food science studies at Oniris, I worked at Sucre Union, then led international humanitarian and agricultural projects in Mozambique, Cameroon, and Cuba. I eventually returned to France to serve as CFO at CIRIO France, founder of Domoresto, and later as Director of Development at EY.

Today, Caviar de Neuvic employs 63 people, exports to 33 countries, and operates through 100 points of sale. We raise 150,000 sturgeons and generate €8.3M in revenue. The company is now the third-largest caviar producer in France, driven by a commitment to sustainable growth.

A magnificent setting, right in the heart of nature by the river. The welcome was warm, and our guide’s explanations were clear and fascinating. I learned so much, both about the production process and the different species of sturgeon. The tasting of caviar and other products at the end of the tour was simply delicious. I recommend this visit 100%—it is an experience not to be missed!
